Eric and Emma Gilbert grew up surrounded by chocolate in Victoria-by-the-Sea.  Their parents have been making chocolate for 20 years and so it’s only natural they would develop the same passion for Island Chocolates.    Eric spends his winters in Ecuador seeking out the best cacao beans he can find and working with the local farmers to ensure they’re receiving a fair price for their precious crop.    When he returns, he and Emma turn the beans into works of art with amazing tastes.

And as chocolatiers, Eric and Emma love sharing both their passion and their talent for making chocolates.  You’ll be fascinated by Eric’s adventures in Ecuador and amazed by Emma’s creativity….but more importantly you’ll get to sink your hands into smooth succulent chocolate as they show you how to make your own creations.
